Recipes
Elda Tate's Sour Cream Coffee Cake
1/2 c. shortening
3/4 c. sugar
1 tsp. vanilla
3 eggs
2 c. sifted flour
1 tsp. baking powder
1/2 tsp. Salt
1 tsp. baking soda
1 c. sour cream
Topping:
6 tbsp soft butter
1 c. brown sugar
2 tsp. cinnamon
1 c. chopped nuts
2 tbsp flour
Start with room temperature eggs, butter, and nuts. Combine the finely chopped walnuts with butter, brown sugar, cinamon, 2 tbsp flour and set the mixture aside. Then sift the dry ingredients together: (flour, salt and baking soda) and set it aside. Next cream the white sugar and shortening together with vanilla and add the eggs one at a time beating well after each egg. Measure the sour cream and begin adding the flour mixture, alternating with the sour cream until both are mixed in well. Place into a well-greased tube pan half the batter and half the butter/nut/brown sugar mixture, followed by the remaining batter and top off with the nut mixture.
Bake in the center of a 350 degree oven for 50 minutes. Cool for 15 minutes on a wire rack and carefully remove the sides of the pan and release cake from bottom of the pan and place on serving platter. (I cut the cake in half and move it that way to avoid fracture. It is very rich!

Dee 's Signature Granola
Serve as dry cereal with milk.
Combine 1/4 c. honey, 1/2 c. canola oil, 1 c. water with the following ingredients:
5 c. oatmeal
2 c. whole wheat flour
1/2 c. cornmeal
1/4 c. soy flour
2 c. coconut
1/2 c. wheat germ
1 tsp. salt 1/2 c.
brown sugar
1/2 c. sesame seeds
1 c. sunflower seeds
1 c. English walnuts chopped
1 c. cashews chopped
Mix all together with clean hands and bake in many batches on cookie sheets or shallow pans at 200-250 degrees for 2-3 hours or until lightly browned. Then add the following (your choice of combinations) raisins, dried fruits such as apricots, apples, currents, dates chopped. Cool and seal in plastic bags - refrigerate or freeze to keep indefinitely. It ships well as a CARE package to absent family members or others who need love and nourishemnt. |
